二氧化氯对苹果表面E.Coli O157∶H7杀菌规律的数学模型
Mathematical Model of Sterilizing Rule of Chlorine Dioxideon the E.Coli O157:H7 in Apple Surface
【摘要】 将原料清洗与二氧化氯对苹果表面E.Coli O157∶H7杀菌过程相结合,通过四因素中心组合试验设计(CCD),以杀菌效果(用杀菌效率的负对数表示,即log(N_o)/N)为响应值,研究了各因素如:二氧化氯溶液浓度、杀菌温度、处理时间和杀菌液pH等对杀菌效果的影响,并用数学方法描述了二氧化氯对苹果表面E.Coli O157∶H7的杀菌规律,结果表明:二氧化氯溶液浓度、杀菌温度和pH对杀菌效果有协同作用,建立的杀菌过程数学模型其预报结果与实测结果拟合基本一致,相对误差在±5.0%以内。
【Abstract】 The sterilizing rule of chlorine dioxide(ClO2)on E.Coli O157 ∶ H7 was investigated in the process of apple rinsing. The central composite design(CCD)was used to describe the influence of main, quadratic,and cross-product effects of the environmental factors such as chlorine dioxide(ClO2)concentration,temperature,treating time and pH on the response of sferilizing efficiency(log(N0)/N). The result showed that the three factors including chlorine dioxide(ClO2)concentration,temperature,and pH had the synergistic effects on the sterilizing efficiency(log■)of E.Coli O157 ∶ H7. The predicting results of the mathematical model coordinated with the experimental data, and their relative error is within ±5.0%.
