小麦精选加工效果的探讨

【摘要】 小麦经严格的粒径分级和重力分选,容重和发芽率发生了变化。粒径分级后,随着粒径的增大,容重和发芽率总体上呈增大趋势,但是粒径较大籽粒较易受到雨害,影响其种用品质,而食用品质测试指标变化表现不一致,各粒径区间脂肪酸值基本保持不变,随粒径的增大粗蛋白质含量呈下降趋势,降落数值有一定的增长;再经重力分选后,从1口到5口容重和发芽率依次减小,与未经重力分选样相比,容重测试分选结果较明显,发芽率测试分选结果不明显,同时也表明粒径较大区间段的籽粒其内部籽粒间的比重和种用品质差异性较小,2.6~2.8 mm和2.8~3.0 mm粒径区间重力分选后食用品质测试指标表现不一致。小麦粒径分级和重力分选对食用品质分级效果不明显。

【Abstract】 There are changes for wheat bulk density and germination rate after grains are graded strictly according to grain thickness and separated according to grain gravity.While the grain thickness increases,the bulk density and germination rate generally manifest increasing trend.Larger the grain thickness,more easily to be harmed it by rain,and it’s quality will be affected.The changes for testing index of eating quality are not consistent with the changes of grain thickness,fatty acid value keeps stable basically according to grain thickness,crude protein content appears decreasing trend with increasing grain thickness,falling number increases very slowly.Then being processed on gravity separator,the bulk density and germination rate from discharge hole 1 to discharge hole 5 decrease in sequence,the testing results for the bulk density are more obvious and the germination rate not obvious as compared with non-gravity separating.At the same time less the specific gravity and eating quality difference between grains,larger the grain thickness.Testing indexes of eating quality are not consistent with grain bulk gravity after gravity separating for 2.6~2.8 mm and 2.8~3.0 mm grain thickness sections,grading effect of eating quality is not obvious on grain thickness and then bulk density.
