冬虫夏草(Cordyceps sinensis)菌丝体固体发酵粉化学成分的分析

【摘要】 本研究对一种冬虫夏草(Cordycepssinensis)菌丝体固体发酵粉的化学成份进行了分析,包括粗成份,生物活性成份,脂肪酸,氨基酸,金属元素等。冬虫夏草菌丝体固体发酵粉中3′-脱氧腺苷含量40.81μg/g、腺苷含量745.4μg/g;甘露醇的含量为165.8mg/g,多糖含量为157.3mg/g;谷氨酸,天门冬氨酸,苯丙氨酸是三大类主要氨基酸;不饱和脂肪酸是优势脂肪酸,以亚油酸,油酸为主。和文献记录的结果相比,虫草发酵粉中3′-脱氧腺苷,甘露醇的含量明显高于冬虫夏草子实体中相应成份的含量;各种氨基酸的含量和水平与冬虫夏草子实体中相应氨基酸的含量和水平相当;虫草发酵粉中的其它化学成份和冬虫夏草子实体中相应成份基本一致。

【Abstract】 This investigation characterized the proximate composition, amino acid profiles, content of the bioactive ingredients, fat acid and metals of a new mycelial preparation of Cordyceps sinensis, via fermentation in solid media. The contents of adenosine and cordycepin were 40.81 μg/g and 745.4 μg/g, respectively. The content of mannitol was 165.8 mg/g. The content of Polysaccharide was 157.3 mg/g, containing glucose, mannose and galactose. Glutamic acid, aspartic acid and phenylalanine were the three main amino acids in sample tested. Unsaturated fatty acids were prior to saturated fatty acids, in which Octadecdienoic acid and Octadecenoic acid were main components. Compared with data of Cordyceps sinensis reported, this mycelial preparation of Cordyceps sinensis show close resemblance in the level of main chemical components. The contents of cordycepin and mannitol were more than those in Cordyceps sinensis; the levels of amino acids were similar to those in Cordyceps sinensis.
