【Abstract】 The results of the experiment showed that:the rapid growing bacteria in the experimental smack-clean propergated fast before raw material’s fermentation and resulted fast temperature-rise of fermenting material;It was two or three days earlier to high temperature stage than that of no the experimental smack-clean;And alkaline volatile decreased and the offensive odour decreased 2～3 degree.更多还原
