物理方法快速鉴别冰鲜和解冻鲢鱼及梭鱼的研究

【摘要】 运用伏安法测定不同频率下冰鲜和解冻鲢鱼、梭鱼的阻抗,分析冰鲜和解冻鲢鱼、梭鱼的阻抗随频率变化的特点。结果表明:频率从1000Hz增大到16000Hz时,冰鲜和解冻鲢鱼、梭鱼的阻抗均随频率增大而减小,但冰鲜1d、3d、7d鲢鱼和梭鱼的阻抗相对变化值(Q)值分别为52.4%、31.1%、16.9%和61.3%、43.4%、17.9%;而冷冻15d、30d后解冻的鲢鱼和梭鱼,其Q值分别为5.4%、4.7%和8.1%、6.5%;冰鲜鱼的阻抗相对变化值明显大于解冻鱼。依据Q值可以较好区分冰鲜和解冻鲢鱼及梭鱼。

【Abstract】 Electric conduction Properties of unfrozen and frozen-thawed silver carp and barracuda was studied by measuring their impedances under different frequencies. The impedances varied as frequency change, Although impedances of both unfrozen and frozen-thawed silver carp and barracuda decreased as frequencies increased, change ratio of impedance of unfrozen silver carp and barracuda was evidently more than that of frozen-thawed ones. Therefore, it is feasible to identify unfrozen and frozen-thawed crucian carp using change ratio of their impedances.
