几种富马酸单酯的抑菌效果研究

【摘要】 测定5种富马酸单酯对11种常见霉菌的最小抑菌浓度以及对牛奶酸败混合菌群的抑制作用。结果表明,在实验浓度下,富马酸单酯对11种常见霉菌以及牛奶混合菌群均有较强的抑制作用,尤其是对青霉的效果最好;不同的富马酸单酯的抑菌能力有差别,富马酸单戊酯抑菌能力最强;富马酸单酯的热稳定性很好,经121℃、30m in处理,仍具有良好的抗菌效果。

【Abstract】 The minimal inhibition concentration of five n-monoalkyl fumarates on eleven kinds of mildews and their inhibitory effects on mixed bacteria from sour milk were studied. The result showed that n-monoalkyl fumarates have evidently bacteriostatic effect on bacteria mentioned above. Their inhibition on penicillium is strongest. Among the five n-monoalkyl fumarates, monoarmyl fumarate is the best inhibitor. All of the five n-monoalkyl fumarates have good stability under heat treatment (121℃,30min).
