【摘要】 简述了聚合酶链反应(PCR)技术的基本原理、特点及其在食品微生物检测、转基因食品检验等食品工程领域的应用情况。

【Abstract】 We discussed on the principle and specialty of PCR(Polymerase Chain Reaction) and studied on its applications in detection of food microorganism and genetically modified food.
