麦苗汁的营养成分及其抗氧化活性测定

【摘要】 本研究测定了麦苗汁的营养成分和抗氧化活性,结果表明:麦苗汁中含多种氨基酸、丰富的维生素、矿质元素和黄酮类化合物;并且有较高的抗氧化活性。亚油酸法测得其抗氧化活性分别是BHT、α-生育酚的4.9倍和7.2倍;黄嘌呤氧化酶法测得其SOD活性是葡萄的7倍,并且有一定的GSH-Px活性和自由基清除活性。

【Abstract】 The nutritious components and antioxidant activities of wheat seedling juice were determined in the study. The results showed that the wheat seedling juice contains various amino acids, abundant vitamins, mineral elements and flavones, and has strong antioxidant activities. The antioxidant activities measured by linoleic aid method is 4.9 times and 7.2 times stronger compared to butylated hydroxytoluene and α-tocopherol, respectively. The SOD activity measured by xanthine oxidase method is 7 times stronger compared to grap; and also has satisfactory GSH-Px activity and radical scavenging activity.
