【Abstract】 1,1-diphenyl-2-picrylhydrazyl (DPPH radical) is widely used to test the ability of antioxidation. Beer shows endogenous antioxidative activity because of the antioxidants contained that can scavenge radicals. In this study a DPPH -spectrocolorimetery method is established to determine DPPH radical scavenging capacity, and the capacity has shown very close correlation with antioxidative activity of beer.更多还原
