鲜奶中蛋白质含量的快速测定
Rapid determination method for protein content in fresh milk
【摘要】 目的建立一种鲜奶中蛋白质含量快速消化的简便测定方法。方法改用8.8mol/L过氧化氢,浓硫酸混合液(4:1,V:V)为消化试剂,消化好的试样以甲醛法测定。结果该方法的消化时间由原来的6h缩至30min,测定结果和凯氏定氮法(国家标准方法)的测定结果无显著性差异。结论该方法分析速度快,操作简便,可用于鲜奶中蛋白质的测定。
【Abstract】 Hydrogen peroxide (8.8mol/L) and sulphuric acid mixture (4:1,V:V) was used as digesting reagent. Samples were analyzed by methylaldehyde method. It turned out that the digesting time was reduced from six hours to thirty minutes and the results were basically the same as those of kj’eldhl method (for nitrogen determination). It can be concluded that the present method is both fast and simple. It can be used to measure the protein content in milk.
