壳聚糖涂膜保鲜香梨的研究

【摘要】 以壳聚糖为主要成膜材料,并辅以其它助剂,配制了一种新型、安全无毒的香梨涂膜保鲜剂。测定了该膜的通透性能,结果表明,壳聚糖膜对CO2和02具有较好的选择透气性能。用该保鲜剂对香梨进行保鲜试验,结果表明在常温下,保鲜液中醋酸浓度为0.5%,壳聚糖浓度为1.5%-2.0%即有比较好的保鲜效果。更多还原

【Abstract】 A preserving agent that keep fragrant pear fresh was formulated with chitosan as main ingredient, which can form a preserving film on fruit surface. Preservation test showed that this agent delivers good performance. And also, the permeability of chitosan film was studied.
