干燥方法对植物产品物理特性影响的研究进展
Review of Drying Methods on the Physical Characteristics of Plant Materials
【摘要】 综述了干燥方法对植物产品物理特性影响的研究进展。概括了容积密度、真密度、孔隙率和收缩等定义及其表达式的发展。阐述了热风干燥、冷冻干燥、微波干燥、真空干燥等干燥方法对植物物料在干燥过程及其最终产品的容积密度、真密度、孔隙率和收缩的影响,以及组织形态变化的原因。总结了不同干燥方法对产品颜色变化的影响结果及其原因,干燥方法对产品复水性能的影响以及复水性能与产品组织结构内在的必然联系。
【Abstract】 The progress of the impacts of drying methods on physical characteristics of plant materials was reviewed. It also mentioned bulk density, particle density, porosity and shrinkage, stated the developed definitions and related equations for the physical characteristics, generalized the changes of bulk density, particle density, porosity and shrinkage occurring hot air, freeze, microwave and vacuum drying process and final products, summarized the influence of drying methods on product color and rehydration properties. The reason of color deterioration, and the relation between tissue structure and rehydration properties were also analyzed.
