真空冷冻干燥和微波干燥在切花月季干燥中的应用

【摘要】 分别应用真空冷冻干燥技术和微波干燥技术对切花月季进行干燥 ,得到花材的冻干曲线和微波干燥速率曲线。通过数据分析确定真空冷冻干燥的最佳干燥工艺为 :加热板温度 35℃ ,干燥室压强 4 0 Pa;微波干燥的最佳工艺为加热 10 s、间歇 4 5 s。对不同干燥方法得到的花材进行感官评价 ,确定真空冷冻干燥的花材与 10 %的酒石酸溶液护色后再微波干燥的花材在颜色和外观上接近。

【Abstract】 Freeze drying(FD) and microware drying(MD) are used to dry the cut China rose. Drying curves and drying rate curves of rose by FD and MD were obtained. By analyzing the experimental data optimum parameters for FD drying and MD drying had been goten. For FD the best heating temperature is 35℃ and pressure 40 Pa. As for MD 10 s heating time and 45 s tempering time are applied. Comparing the qualities and sensory evaluations of dried flower we come to the conclusion that the flowers dried by FD and pretreated with 10% tartaric acid solution before MD had a good color and appearance. Therefore the technology was accepted by consumers.
