不同蔬菜真空冷却过程影响因素分析
Analysis of Affecting Factors of Vacuum Cooling Process of Different Vegetables
【摘要】 对不同蔬菜的真空冷却试验,表明在真空冷却过程中真空度影响着真空冷却的时间和最终的冷却温度.真空冷却过程还受产品种类影响,不同类型产品的最终真空冷却效果也不同.质量损失是真空冷却过程不可避免的现象,损失程度与产品的种类、温差以及比热容等因素有很大关系.
【Abstract】 The factors affecting vacuum cooling process are analyzed in this paper. It is found that vacuum pressure influences the cooling time and the final temperature of product. And the type of product also has an effect on the results of vacuum cooling, the cooling results in different types of products during vacuum cooling are different. Mass loss is inevitable during vacuum cooling. Mass loss is influenced by the types of products, the temperature difference and the specific heat, etc.
