水蜜桃果浆的流变学特性
Rheological Properties of the Pulp of Juicy Peach
【摘要】 用旋转式粘度计对水蜜桃果浆的流变学特性进行了测定,发现水蜜桃果浆为假塑性非牛顿型流体,其流动行为指数为0.24左右,且不随温度而变化,温度的变化只影响其稠度系数。将水蜜桃果浆稀释时,果浆的稠度系数和流动行为指数均随浓度发生变化,当果浆质量分数在10%左右时,表示出牛顿型流体的特性。
【Abstract】 Rheological properties of the pulp with different contents of juicy peach were measured at different temperatures. The results implied that the pulp behaved like a pesudoplastic non-Newtonian fluid and the flow behavior index was about 0.24. Temperature changes influenced the thickness coefficient but not the flow behavior index while the values of both parameters were altered when the pulp was diluted. The pulp became Newtonian fluid when the juice content was less or equal to 10%.
