抗性淀粉制备及其性质研究
Research on Resistant Starch Formation and its Property
【摘要】 抗性淀粉是摄食后不被小肠消化吸收而被大肠微生物群作用的淀粉;该文对近年来国内外抗 性淀粉研究现状进行综述,包括有关抗性淀粉制备测定方法及物理特性研究。
【Abstract】 Resistant starch is the portion of ingested starchy material which escapes digestion in the small intestine and is acted upon by micro flora in the large intestine. This review highlights the recent development in resistant starch. It also includes formation and determination methods of resistant starch. Some physical properties of resistant starch are showned.
