湿热处理对大豆粉品质的影响
Effects of Different Heat Treatment on Soybean
【摘要】 在不同的时间、温度以及蒸气压条件下,对大豆粉进行湿热处理,测定其尿素酶活性(UA)和蛋白质溶解度(PS)及胰蛋白酶抑制因子(TI)的活性。结果表明:在温度为110℃(0.05 MPa)的条件进行湿热处理,5 min即可将TI灭活96%,PS为66.1%,与其它各处理组相比,是较合适的加工处理条件。
【Abstract】 The urease activities(UA) and the protein solubility(PS)of soybean meal were determined when wet heat treatment were applied on them.Tropism inhibitors activities(TI)were calculated according to UA.The results showed that when soybean meal was heated to 110 ℃ for 5 min,the inactivation rate of TI was 96%,and the PS was 66.1%.Compared with the other groups,heated to 110 ℃ for 5 min was the optutal treatment.
