玉米抗性淀粉提取过程中的影响因素研究
Study on the Extraction of Maize Resistant Starch
【摘要】 以普通玉米淀粉为原料,研究了抗性淀粉的测定方法、压热温度、时间、pH、水分含量、冷冻冷藏时间及干燥温度对抗性淀粉得率的影响。结果表明,在抗性淀粉实际测定中应采用高温法,抗性淀粉提取过程中的pH值对测定结果无显著影响,冷冻处理可以提高抗性淀粉的得率,低温干燥有利于抗性的形成。玉米抗性淀粉的最佳制备条件为:50%水分、150°C压热处理60min、-20°C冷冻24h并于60°C干燥。
【Abstract】 The extraction of resistant starch was studied. The results showed that temperature, time, water content, cooling and refrigerating time,and drying temperature have influences on the extraction rate of maize resistant starch. A comparison of different extracting methods was conducted to get a more reasonable result. High temperature testing method should be adopted when it comes to the extraction of resistant starch. The pH value has no notable influence on the extraction rate. Freezing and low temperature drying can improve the output of resistant starch. The optimum extraction conditions are: water content, 50%; autoclaving temperature 150°C, and time, 1 h. The extraction rate is highest when drying temperature is about 60°C.
