特种稻米营养分析

【摘要】 用凯氏定N法、分光光度计及原子吸收仪分别测定蛋白质、P及Ca、Fe、Zn的质量分数,目的是比较黑米、红米、与普通稻米的营养差异.研究表明,特种稻半糙米(红米、黑米)的蛋白质,矿物质(Fe、Ca、P、Zn)的质量分数高于普通稻米,与普通精米比较Fe、Ca、Zn达显著水平,蛋白质、P质量分数达极显著水平.上述营养成分普通糙米与普通精米比较,矿物质(Fe、Ca、P、Zn)达显著水平,蛋白质质量分数达极显著水平.说明特种稻米营养成分质量分数较高主要是由其遗传特性所决定,稻米加工方法不同也会引起养分质量分数的较大差异.

【Abstract】 Using Kjeldahl method, spectrophotometric method, atomic absorption spectrometer to determine respectively the amounts of protein, P, Ca, Fe and Zn, the aim is to compare the nutrient difference among the black rice, red rice and common rice.The study showed that the protein and mineral (Fe, Ca, P, Zn) contents of the special rice with half-rough (red rice, black rice) are more than that of the common rice. The special rice with half-rough is compared with the refined common rice and it is found that Fe, Ca, Zn contents reach to <0.05 which is of level significance; the protein, P contents reach to <0.01. The common rough rice in composition of nutrient compares with the common refined rice, and it is found that the mineral (Fe, Ca P, Zn) reach to <0.05, the protein reach to <0.01. The elucidation is that the special rice having more contents of nutrient ingredients is mainly determined by genetic speciality, and different processing methods in rice would induce diverse nutrient contents comparatively.
