开菲尔中菌种分离与鉴定方法初探
To Explore the Separation and Identification of Bacteria in Kefir
【摘要】 开菲尔乳是由数种乳酸菌及酵母菌共同发酵而得。本实验对开菲尔发酵液(即开菲尔乳)中的各种微生物进行了分离培养,依据其个体特征、糖发酵实验以及生理生化实验结果,筛选出3支菌株,对照乳酸菌、酵母菌、细菌分类鉴定表,确定此3支菌分别为:肠球菌属坚强肠球菌种;肠球菌属假鸟肠球菌种;乳杆菌属干酪乳杆菌。
【Abstract】 Kefir is fermented by many kinds of lactobacillus and yeasts. This experiment separated and cultivated several microbes in Kefir. According to their main characters, results of sugar fermentation and results of physiology and chemistry of bacterium, we identified 3 microbes.
