人体对未破壁花粉消化过程实验分析

【摘要】 花粉是一种营养价值极高的天然保健食品。人体食用花粉是否需要破壁,历来有争议。选用玉米、油菜、荷花、荞麦、芝麻、茶花花粉进行人体直接食用与模拟人体不同消化酶消化的对比实验。结果表明:花粉不需破壁即可被人体消化,消化率在90%以上,人体保健花粉的最佳用量为5 g/d。

【Abstract】 Pollen is natural healthy and nutritious food.Some people think that destroying pollen wall is necessary for human body to absorb the nutrition more completely,while others think not.This program is lauched to research how much nutrient composition of pollen can be absorbed by bodies if the pollen wall isn’t destroyed.In this project,six different pollen types(such as Zea mays,Brassica campestris,Nelumbo nucifera,Fagopyrum esculentum moench,Sesamum orientale,Camellia sinensis),which are highly representative for their different shape,size and thickness of the wall,and different nutrient contents,are selected to do the comparative tests.Firstly,the selected pollen grains are put into the water for few hours,then some of them are eaten directly,and others are used to do digesting test with digestive enzyme(i.e.trypsin,pepsin et al.) in the lab.The digestive test in the lab is processed to simulate the environment of human body’s stomach and intestines.Pepsin is put in when the pH values of water are 2 and trypsin is put in when the pH values of water are 8.The result shows: there is no obvious correlation between the ratio of digestion and destroyed-wall.Pollen can be digested if its wall is not destroyed,and the ratio of digestion can reach more than 90%.It is also found that the thickness of pollen wall has little effect to the ratio of digestion.The optimal healthy dose for pollen is 5 g/d.For same pollen,the nutrient composition will change or not after the wall is destroyed need further study.
