非晶颗粒态木薯淀粉化学反应活性研究
CHEMICAL REACTION ACTIVITY OF TAPIOCA STARCH WITH NON-CRYSTALLIZED GRANULE STATE
【摘要】 将非晶颗粒态木薯淀粉和原淀粉在阴离子、阳离子、醋酸酯及羟丙基醚化剂条件下进行淀粉改性反应,取代度随醚化剂量的改变而改变,但由于整个颗粒处于非晶状态,导致非晶淀粉取代度和原淀粉相比有不同程度的提高.对羧甲基化,取代度平均提高5.72%,最高提高8.26%;对阳离子化来说,取代度平均提高12.36%,最高提高16.38%;对醋酸酯化,取代度平均提高22.87%,最高提高38.20%;对羟丙基化,取代度平均提高30.90%,最高提高74.22%.在不同反应时间进行反应,也可以观察到相同的变化规律,因此将淀粉进行非晶化可显著提高淀粉的反应取代度,最终提高反应效率.
【Abstract】 Non-crystallized and native tapioca starches were carbonxymethylied, cationizatied,hyxoypropylied,acetylied respectively,DS changed with amount of etherified reagent.Because of whole granules being non-crystallized state, DS of non-crystallized granule state starches was higher than that of native starches. When tapioca starch was carbonxymethylied, DS of starches increased 5.72% average, 8.26 most. While cationizatied, DS of starches increased 12.36% average, 16.38 most. To be hyxoypropylied and acetylied , DS of starches increased 30.90% average, 74.22% most and 22.87% average, 38.20% most respectively. In different time, same change rule could be observed. Therefore, DS could increase using non-crystallized tapioca starches.Finally,reaction efficiency could increase,too.
