水代法制取核桃油工艺的研究及有效成分分析
Aqueous extraction of oil from walnut kernel and analysis of its effective components
【摘要】 核桃仁是含油量极高的特种油料 ,研究了以水代法制取核桃油 ,确定的最佳工艺条件为 :将核桃仁在 2 %Na2 CO3与 10 %Ca(OH) 2 1∶1(V/V)溶液中浸泡 ,再经水洗 ,烘烤 ,磨浆 ,兑浆 (料水比1∶0 .8,pH6 ,温度 75℃ ) ,离心分离 ,取油。在此条件下出油率可达 90 %以上。制取的核桃油品质达到食用油标准 ,并且油中富含 30 .37mg/ 10 0g黄酮。
【Abstract】 Walnut kernel is a special oil plant of abundant oil.Aqueous extraction of walnut oil was investigated.The results show that walnut kernel are soaked in the mixture of 2% Na2CO3 and 10% Ca(OH)2,washed by water,dried,milled,mixed(ratio of solid to liquid 1∶0.8,pH6,75℃),separated by centrifuge and extracted,the oil yield efficency is over 90%.The quality of walnut oil by aqueous extraction reach the standards of edible oil. The flavones in 100 g walnut oil is 30.37 mg.
