毛霉M4固体发酵产蛋白酶的研究

【摘要】 该文研究了在培养基中外加碳源、氮源、磷酸盐,及其初始水分、pH值、温度对产酶的影响。结果表明,最适培养条件为温度26℃,初始pH值7.0,加水比为0.9:1(麸皮:水),麦芽糖0.1%,蛋白胨2%,磷酸二氢钾1%,硫酸铵1%。在此条件下培养,酶活可达1397U/g,比对照提高了40%。

【Abstract】 Effects of addition of carbon source, nitrogen source and phosphate, original moisture, pH, and temperature on producing protease was studied. The results showed that the optimal conditions for solid state fermentation were following: temperature 26℃, initial pH 7.0, ratio of bran to water 0.9:1, maltose 0.1%, peptone 2%, KH2PO4 1%, ammonia sulfate 1%. Under this condition, protease activity was 1397 U/g, which was 40% more than the initial design.
