尼泊金复合酯在食醋中的应用
Application of Nipagin complex esters in vinegar product
【摘要】 夏季的袋装醋很容易产生沉淀和粘条,通过检测,发现其主要是芽孢杆菌引起。通过在袋装醋中添加0.12g/kg的尼泊金复合酯,能有效抑制醋中各种杂菌的增殖,防止沉淀和粘条的产生。
【Abstract】 Deposition and zoogloea is the usual problem of sacked vinegar in summer.Through examination,it is found that it caused by Bacillus chiefly.The addition of Nipagin complex esters (0.12 g/kg)could inhibit multiplication of mixed bacterium and solve the pollution problem effectively.
