芭蕉芋淀粉糖化发酵工艺研究
Technique of scarifying and fermenting process of canna starch
【摘要】 为了更好地开发和利用芭蕉芋资源,本项目以单子叶块根植物 芭蕉芋为原料,对其进行了淀粉的提取与糖化发酵试验,从中获取的最佳液化条件为:pH值6 5,温度80℃,时间35min,α 淀粉酶用量6000U,芋浆浓度45%;糖化条件为:温度60~65℃,糖化粗酶用量40U,糖化时间35~40h。试验表明,由于芭蕉芋浆液的粘度较大、沉淀时间长,较之薯类及豆类难,因此芭蕉芋淀粉的提取,需要经多次清洗、沉淀才可获得纯度较高的淀粉,最好采用离心沉淀法使浆渣分离和浆液分离。
【Abstract】 The extraction and scarifying fermentation of canna starch were studied with canna .The best liquefied conditions were as follows:pH6.5,45 % starch thick liquid and 6000 U α-starch enzyme and mixed and liquefied for 35 min at 80?℃.The best scarifying conditions were to use 40U scarifying emzyme for scarifying 35-40h at 60-65?℃.To obtain starch with high purity,repeated wash and sediment was required.
