脉冲磁场杀菌机理分析
Research on mechanism of sterilization by pulse magnetic field
【摘要】 脉冲磁场杀菌作为一种新型的非热杀菌技术,以其特有的优点成为近年来食品科学工作者的研究热点。根据细胞本身的结构特点,从非热效应机制出发,分析了磁场的感应电流效应、洛伦兹力效应、电离效应和在脉冲磁场作用下微生物的自由基效应,对脉冲磁场杀菌的机理进行了简单的分析探讨。
【Abstract】 Sterilization by pulse magnetic field, as a new type of athermal sterilization technology, has become a research hotspot followed by many food researchers because of its particular merit. Athermal effect and the cytoarchitecture is the basis of this research on mechanism of sterilization by pulse magnetic field. The faradic effect, the Lorenz force effect, the ionizational effect and the free-radical effect under pulse magnetic field are analyzed. These effects act together to forming the sterilization mechanism.
