【摘要】 以印度洋西北海域鸢乌贼为原料,测定不同部位的重量组成及可食部分(胴体、裙边和头足三部分)的基本成分,并测定去皮胴体不同温度下的加热失重。结果表明:印度洋鸢乌贼的可食部分比例高达81%左右,粗蛋白含量为17.8%～19.1%,粗脂肪含量为0.6%～1.0%,可认为是高蛋白低脂肪的水产品;其胴体水分含量比一般柔鱼高,但蒸煮加热时保水能力较强;较太平洋鸢乌贼在体型、成分和加工性能上均有一定差异。更多还原

【Abstract】 The proximate composition of Symlectoteuthis oualaniensis in edible parts (mantle, fin, tentacle) and their weights were investigated in the northwestern Indian Ocean. In addition, the water loss in mantle by heating was measured. It reveals that the edible part accounts for 81% of the whole approximately with the contents of crude protein 17.8%-19.1% and fat 0.6%-1.0%, and thus it might be considered as a kind of aquatic products with high protein and low fat food. The moisture content in mantle of Symlectoteuthis oualaniensis is higher than that in mantle of other squids, but it shows high water-holding capacity. However, there are some differences in body shape, composition and processing performance from Sthenoteuthis oualaniensis in the Pacific Ocean.更多还原
