【Abstract】 Preparation ways of noncrystallization granule state starch was systemically reported.They were high temperature swelling in water dispersing system and alkali swelling in NaOH solution.Changes from polycrystallization to noncrystallization was affirmed by polarized microscope.It is suggested that highly cross-linked corn starch could be prepared to noncrystallization granule state starch with amorphous structure through native starch of polycrystallization granule state.更多还原
