使用挤压膨化原料时酒精发酵中酿酒酵母的变化规律探讨
The Study on the Growth of Yeast in the Ethanol Extrudation
【摘要】 通过试验选取挤压膨化工艺参数组合为 :挤压机模孔直径Φ =1 1mm ,套筒温度T =1 70℃ ,脱胚玉米含水量W =1 3 % ,螺杆转速 1 60r/min。在此参数下获得的物料 ,与未膨化样品对比 ,酿酒酵母在膨化物料中酵母数最高值可由 1 68× 1 0 8/mL升至 2 67× 1 0 8/mL。酵母增代时间可由 1 6 0 3h缩短至 1 3 3 6h。添加营养盐尿素和KH2 PO4 后此种效果更加明显 ,这种处理有可能使发酵时间缩短。
【Abstract】 Optimum parameters of extruder were obtained from the experiments. That is, diameter of die nozzle Φ=11mm, extrusion temperature T=170℃, moisture of material W=13%, speed of screw n=160r/min. The number of yeast in the extrudate increased from 1 68×108个/mL to 2 67×108个/ml while the time was shortened from 16.03 h to 13.36h. The difference became more obvious when potassium dihydrogen phosphate and urea were added. The fermentation time was also further shortened with the new process.
