超滤技术开发低乳糖乳粉的研究

【摘要】 文章以牛乳为原料,采用超滤技术,探讨了开发低乳糖乳粉的可行性。试验结果表明,采用切割分之量为3万的有机膜,在0.22MPa、40℃条件下超滤,浓缩倍数可达2.5倍以上,脱脂乳平均透液通量提高30%左右。蛋白质截留率在92.52%以上,乳糖截留率在12.29%以下,钙、磷等矿质元素也有较高的截留率。牛乳经超滤后,再经真空浓缩、喷雾干燥、调制等工序,制作的低乳糖乳粉符合相关标准,是乳糖不耐症人群的理想乳制品。

【Abstract】 Feasibility of developing low lactose powder is investigated by ultrafiltration. The concentration factor of milk could be up to 2.5× at 0.22MPa and 40℃ with oganic membranes of 30000 dalton pore size. Average flux of skimmilk is 30% higher than whole milk,, protein retention is more than 92.52%; retention of lactose is less than 12.29%. Minerals(Ca,P) have also comparatively ideal retention. The milk powder is made by vacuum concentration, dryspraying and blending from skimmilk ultrafiltrated is up to the quality standard of China, it is a kind of ideal milkproduct for the consumers suffering from lactose intolerance.
