紫甘薯花色苷色素研究进展
The Research Advances of the Anthocyanins Pigment from Purple Sweet Potato
【摘要】 概述了国内外关于紫甘薯花色苷色素的研究进展,包括其生理活性、色素提取和纯化方法、含量测定以及组分分析,为该色素的进一步开发利用提供依据。研究表明,紫甘薯花色苷具有明显的抗氧化、抗突变、减轻肝功能障碍等生理功能。该色素主要采用酸性水溶液或醇溶液直接浸提,利用不同类型的树脂进一步去除杂质,得到色素产品。目前,多采用色价法或产率法进行花色苷含量的测定。其花色苷的主要类型为芳香酸酰化的矢车菊素和芍药素。
【Abstract】 The research advances of the anthocyanins pigment from purple sweet potato are described, including the physiological activity, the methods of extraction and purification and composition analysis. The pigment has the physiological functions of antioxidation, antimutation, protection for liver and so on. Usually, the pigment is extracted by acid aqueous or alcohol solution and purified by different kinds of resins. Two methods can be used to detect the content of anthocyanins, one is the color value, the other is the productivity. The major anthocyanins in purple sweet potato are cyanidin and peonidin acylated with aromatic acid.
