【Abstract】 The visible absorption spectrum, light fastness, thermal stability, oxidation reduction resistance of anthocyanin grape purple pigment were studied. At same time,metalic ions effect, such as Na⁺, Cu^2+, Fe^3+,Ca²⁺,Zn²⁺,Mg²⁺ on stability of purple pigment were discussed. The results showed that, the extracted anthocyanin pigment from grape peel ,has the properties of high profits, low cost and controllable quality, and has the good future.更多还原
