【Abstract】 The distribution and utilization of black rice in china is introduced, and also the content determination and extraction as well as the basic natures such as the chemical structure, chemical nature and stability of black rice pigment are presented. Finally, the processes of several black rice products are discusses, and the problem of scattered processing and the existing problems in black rice processing such as the damage of effective components and improper utilization of by-products are pointed out.更多还原
