【摘要】 随着世界食品工业对卫生标准的日益严格,绿色食品加工技术受到越来越多的青睐.微波技术是近年来食品加工工程中的先进应用技术.本文对微波干燥、微波萃取、微波膨化等技术的加工机理、工艺特点、发展应用现状进行了描述.并对未来微波发展前景做出预测.

【Abstract】 The world sanitary standard of food industry becomes more and more strict. And more and more people welcome the food produced by green processing. Microwave technology is advanced technology of food processing in recent years. An introduction is made on the methods ,characteristics and development of some microwave applications in food industry, such as microwave dehydration technology,microwave extraction and microwave puffing technology and so on. The prospect for the progress of microwave technology in food industry is made.
