碱性蛋白酶水解法制备玉米肽的研究
Study on Preparation of Corn Peptide from Corn Protein by Alkaline Protease Hydrolysis
【摘要】 利用碱性蛋白酶对玉米蛋白进行水解制备玉米肽,以水解度(DH)表征其反应程度。确定了玉米肽的最佳水解条件:温度为55℃,pH值8.5,底物浓度5.0%,酶质量分数4.0%,水解时间为2.0 h。在此条件下,水解液的氮溶指数(NSI)和水解度(DH)分别为62.87%和62.40%。
【Abstract】 Corn protein was hydrolyzed by an alkaline protease to produce corn peptide. Extent of reaction was expressed in terms of degree of hydrolysis. The optimum hydrolyzing conditions have been determined: temperature is 55℃ , pH value is 8.5, substrate concentration is 5.0% , enzyme concentration is 4.0% , and hydroyzing time is 2.0 hours. In these conditions, nitrogen solubility index (NSI)and degree of hydrolysis(DH)of hydrolysate are respectively 62.87% and 62.40% .
