【Abstract】 The study on the intrinsic amount and mechanisms of formaldehyde-producing in aquatic products is of great significance to carring out residues the limitation and security index of formaldehyde in aquatic products. In this passage the originations and amount of formaldehyde produced in aqudic products,the species of the aquatic products producing formaldehyde,the properties of TMAO-ase and the factors influenicing on formaldehyde-producing in aquatic products are summarized briefly, according to the information at home and abroad and our research work.更多还原
