【Abstract】 The extraction of citrus grandis peel was investigated with orthogoual test method. The results showed that the optimum conditions were extracting the peel with 90% alcohol solution in a water bath at 60 (°C) for one hour. The maximum capabilities of inhibiting the production of nitrosodimelhylamine and scavenging sodium nitrite were 93.2% and 91.1%, respectively.更多还原
