生物法生产香兰素研究进展

【摘要】 香兰素广泛用于食品工业和其它行业中,世界上年消费量达6000吨。目前市场上销售的香兰素主要为人工合成,但天然香兰素更受人们欢迎,价格也高得多。本文综述了国外采用生物方法利用不同前体物质生产香兰素的研究进展。

【Abstract】 Vanillin, with the annual consumption about 6000 tons in the world, is a widely-used flavor for foods, perfumes and cosmetics, and also raw material for pharmaceuticals. Because of the limited availability of vanilla pods that are used to produce natural vanillin and the increasing customer-led demand for natural vanillin, the price of natural vanillin is about ten times as high as synthetic one. This article reviewed the recent approach on transformation of different precursors to vanillin by plant cells, microorganisms and enzymes.
