新疆紫草萘醌色素的理化性质研究
The Physicochemical Properties of Nuphtheroquinon Pigment of Amebia Euehroma from Xinjiang
【摘要】 研究了新疆紫草色素在不同pH、温度及光照条件下的稳定性,及金属离子和氧化剂、还原剂等对该色素稳定性的影响。结果表明,该色素在酸性溶液中稳定,对热稳定,但日光对色素有一定的降解作用。抗坏血酸、碳水化合物、柠檬酸、双氧水、几种金属离子对色素无不良影响,淀粉有一定的增色作用。色素对亚硫酸钠、铁离子、镁离子较敏感。
【Abstract】 The physicochemical properties of nuphtheroquinon pigment of amebia euehroma from xinjiang are studied. The results show that. the pigment is stable in acid and under heat, but the light can decompose the pigment. The ascorbic acid , amylum , citric acid ,sucrose and several metal ions have no harmful effects, and amylum have fortication effects on the tone of the pigment. The pigment is sensitive to Na2SO3, H2O2 and Fe3+.
