一株产共轭亚油酸乳酸菌的鉴定及其特性

【摘要】 从酸菜汁中分离筛选到一株产共轭亚油酸 (CLA)能力较高的乳酸菌。经鉴定 ,确定为植物乳杆菌Lactobacillusplantarum。微氧条件可提高CLA的产量 ,催化亚油酸 (LA)生成CLA的酶受着LA的诱导。 37℃对细胞生长和CLA生成最为有利。对数生长期为 6~ 1 2h ,1 8h后进入稳定期。在 1 4~ 2 2h ,CLA生成量快速增加 ,2 4h时达到最高值。该菌的培养物经萃取、甲酯化后 ,进行了气相色谱分离 ,生成的CLA产物为c9,t1 1 t9,c1 1 CLA和t1 0 ,c1 2 CLA异构体的混合物。

【Abstract】 A lactic acid bacteria L18 with higher value of CLA forming ability was isolated from pickle juice samples, and identified as Lactobacillus plantarum . Microaerobic conditions were in favor of increasing the amounts of CLA. The enzymes catalyzing CLA formation were indicated to be induced by linoleic acid. The optimum temperature was 37℃ for the cell growth and CLA formation, the log growth phase was in 6~12h and stationary phase was beyond 18h. The amounts of CLA were largely increased in 14~22h; the production of CLA reached the maximum at 24h and the product was a mixture of CLA isomer (c9,t11/t9,c11 CLA and t10,c12-CLA).
