杜鹃花色素的提取及稳定性研究

【摘要】 对杜鹃花色素的理化性质进行详细的研究,结果表明,杜鹃花色素溶解性好,耐热性尚好,氧化剂,食品添加剂、金属 离子(除Al3+ Fe3+)对色素无不良影响。

【Abstract】 In the paper Rhododendron simsii were use as raw materials. They were immersed with different impregnant and then pigment was extracted. The characters of pigment such as dissolving, anti-heat, anti-reducing agent and so on were research. Several frequently used additives in food were added and the steadiness of pigment was studied, too.
