牙鲆正常个体与白化个体脂肪酸组成的比较
Comparison of fatty acid composition between normally pigmented and albino Japanese flounder, Paralichthys olivaceus
【摘要】 采用毛细管色谱法对牙鲆Paralichthysolivaceus正常个体和白化个体肌肉、皮肤和肝脏的脂肪酸组成及含量进行了检测。结果表明:两者相对应组织的脂肪酸种类没有区别,但脂肪酸的含量存在若干差异。1)两者肌肉的脂肪酸组成基本相似,特征为多不饱和脂肪酸(PUFA)>饱和脂肪酸(SFA)>单不饱和脂肪酸(MUFA),PUFA以n-3系列为主,但两者肌肉中有13种脂肪酸的含量差异显著(P<0 05),正常个体PUFA含量显著高于白化个体(P<0 05),而MUFA含量显著低于白化个体(P<0 01);2)两者皮肤中有7种脂肪酸的含量差异显著(P<0 05),正常个体SFA含量显著高于白化个体(P<0 01),而PUFA和MUFA的含量,两者差异均不显著(P>0 05);3)两者肝脏中只有3种脂肪酸的含量差异显著(P<0 05);4)正常个体的n-3/n-6比值高于白化个体,尤其在肌肉和肝脏中。
【Abstract】 Fatty acid composition and relative contents in muscle, skin and liver in normally pigmented and albino Japanese flounder( Paralichthys olivaceus )were analyzed by capillary gas chromatography column. There were no significant differences in patterns and kinds of fatty acids in the corresponding tissues for both groups of fish. However, there were significant differences in fatty acid contents between the two groups. In the muscle, the normal individuals had significantly higher level of polyunsaturated fatty acids (PUFA)( P<0.05 )and lower level of monounsaturated acids(MUFA)( P<0.01 ) than the albino had, although the two groups showed the same characteristic of PUFA > saturated acids(SFA) > MUFA and n-3 PUFA>n-6 PUFA. The SFA in skins was significantly higher in normal individuals than that in the albinos ( P<0.01 ). No significant difference was found in PUFA and MUFA in skin between the two groups. The contents of 17∶0, (18∶1n)-7, and 20∶1n-9 were significantly different between the two groups( P<0.05 )in liver. The ratio of n-3/n-6 in muscle and liver was higher in the normally pigmented individuals than that in albinos.
