【Abstract】 Microwave vacuum drying is a new technology which takes the advantages of both microwave and vacuum drying. The characteristics of microwave vacuum drying technology is suitable for food drying. A new method of computer auto-monitoring is reviewed in this paper. It can measure the real-time temperature, weight and degree of vacuum very conveniently. And it has settled the problem of monitoring water content during the drying.
