荔枝果皮褐变机理研究进展
Recent Advances in Research of Pericarp Browning of Litchi
【摘要】 通过酶促褐变、失水褐变、花色苷降解致褐、病菌致褐、呼吸强度和乙烯释放增加等其他因素综述了有关荔枝果皮褐变机理方面的研究进展。
【Abstract】 The advances in the studies on the mechanisms of litchi pericarp browning were reviewed. The factors involved include enzymatic browning, water loss, anthocyanin degradation, pathogen infection, increase in respiration rate and ethylene production.
