pH与低水活度对单核细胞增生李斯特菌生长的影响
Effects of pH and low α_ω on growth of listeria monoytogenes
【摘要】 〔目的〕将单核细胞增生李斯特菌株 (ListeriaMonoytogenes,LM)加入TSB -YE增菌液中 ,2 0℃培养 ,研究在不同的pH与水活度实验条件下单核细胞增生李斯特氏菌的生长参数。〔方法〕加入NaOH、乙酸、NaCl调节TSB -YE增菌液 ,使其pH值分别为 9.0、5 .6 ,水活度 (αω)为 0 .95 0。〔结果〕单核细胞增生李斯特菌能迅速战胜碱性压力 ,但其对酸性压力和低αω 压力敏感。〔结论〕在酸性或低αω 实验条件下 ,单核细胞增生李斯特菌生长过程中延滞时间和代时与标准条件相比明显延长。
【Abstract】 The growth parameters of Listeria Monoytogenes at 20~Cin a TSB-YE broth of different Ph and water activity was studied. Adjusting TSB-YE broth by the addition of NaOH, acetic acid, NaCl, in order to reach a pH9.0 or pH5.6 and an α ω 0.950, respectively. Listeria Monoytogenes were able to overcome the alkaline stress rapidly, whereas acid and low water activity induced the sensitization, the log and generation time of Listeria Monoytogenes in the acid and low water activity stress were longer than that of in normal control groups.
