虫草头孢菌粉辐照灭菌及对其主要成分的影响
Decontamination of Fermental Powder of Cephalosporium Sinensis and Influence on Its Main Components by Irradiation
【摘要】 研究了60 Co γ射线辐照虫草头孢菌粉的灭菌效果及对其主要营养成分的影响。结果表明 ,辐照可有效地杀灭菌粉中的杂菌和霉菌 ,随着辐照剂量的增加菌粉中的含菌量呈同步下降。杂菌和霉菌的D10 值分别为 5 .5 1kGy和 5 .72kGy。经 8~ 9kGy辐照处理的菌粉 ,其主要功能成分 (腺苷、甘露醇、氮含量 )及其它成分脂肪酸、蛋白质、总糖、游离总氨基酸无显著影响 ,其维生素C和E的含量分别下降 8.4 %~ 9.5 %和 2 9.6 %~ 33.3%。辐照灭菌后的头孢菌粉有较好的耐贮藏性 ,保质期延长。
【Abstract】 The decontaminative effects of 60Co-gamma irradiation on the fermented powder of Cephalosporium sinensis and influence on its components were studied. The results showed that irradiation was very effective in killing the bacteria and moulds in fermented powder, the bacteria and moulds synchronously decreased with the increase of the irradiation dose. The D 10 value for bacteria and moulds were 5.51 kGy and 5.72 kGy, respectively. The irradiation with 8-9 kGy did not obviously change the fermented powder’s main functional components (adenosine, mannitol, nitrogen) and other contents of fatty acid, protein, total polysaccharide, total free amino acid, but vitamin C and E decreased by 8.4%-9.5% and 29.6%-33.3%, respectively. The fermented powder after irradiative sterilization has a better storage property, and thus enhancing the quality-guarantee period of the fermented powder.
