【摘要】 以水为萃取剂,提取不同方法干燥的核桃外果皮中棕褐色色素,并对其稳定性进行了测试。结果表明:该色素水溶性好,耐氧化——还原性能较强,耐热性、耐光性很好。盐、蔗糖、金属离子对色素的色泽无不良影响,乙醇有增色效应。水提取棕褐色色素,工艺简单、无污染。更多还原

【Abstract】 Use water to distill the Dark Brown Pigment in the differently dried walnut epicarp. We have tested the stability of the dark brown pigment. The results show that the pigment can be better solved by H2O. At the same time,it has good resistance to oxidation and is stable in hot and light.Salt、C12H22O11 and metal ions have little effect on it.Using water to distill the Dark Brown Pigment has many advantages,such as simple technologg and low pollution.更多还原
