微胶囊壁材选择对粉末油脂品质的影响
Effect of Microcapsule’ s Wall Material’ s Seolection on the Quality of Oil and Fat Powder
【摘要】 研究以水解大豆蛋白,麦芽糊精以及乳化剂、稳定剂等复合作为微胶囊壁材,用喷雾干燥法制备粉末大豆色拉油和粉末猪油,使油脂便于包装,使用方便.由此方法制出的粉末油脂,包埋效率可达75%,产率可达90%以上.
【Abstract】 In this study, soy protein hydrolysate (SPH), maltodextrin (MD), emulsifier and hydrocolloids were used as the compound wall material, and powders of soybean salad oil and lard were produced by spray-drying technique. These products are very convenient for packaging and use. as a result, the embedding rate could reach 75%, and the production yield could exceed 90% .
