【摘要】 [目的] 探讨学校食堂食品卫生量化等级管理模式,为加强学校食堂食品卫生管理提供依据。 [方法]对77所中、小学校食堂2002、2003年的监督检查频次、量化评分项目、评分结果以及环节采样、食物中毒发生情况进行比较分析。 [结果] 实行量化等级管理后,按等级确定监管频次,学校食堂自身管理水平、量化指标合格率、环节采样合格率均有显著提高,食物中毒事故有所减少。 [结论] 量化等级管理变常规监督为科学监督,把政府监管与学校自身管理有机结合起来,合理配置卫生人力资源,促进学校食堂自律,提高了学校食堂食品卫生的整体水平,是一种有效的管理模式。更多还原

【Abstract】 [Objective] To explore the model of magnitude classificatory management on food sanitation of school refectories. [Methods] To compare and analyze the frequencies and quantities of supervises, the items of magnitude analysis, result of analysis, the process sampling and the situation of food poisoning occurred in 77 middle and primary schools from 2002 to 2003. [Results] The frequencies and quantities of supervise were decided according to the degrees, after practicing the magnitude classificatory supervise mode. The following items improved remarkably: the self management level of school refectory , the eligibility rate of magnitude targets and process sampling. The food poisoning cases reduced. [Conclusion] The mode of magnitude classificatory supervise makes the regular supervise more scientific. It well combines the government supervise with school self management. Human resources are well utilized. Self-discipline of school refectory is advanced and the whole level of food sanitation of school refectories has improved. So it is an effective management mode.更多还原
